Lemon Garlic Shrimp Roasted with Broccolini

What could be better then a meal that looks like it took all day that really took about 10 minutes? I love to cook for people I love. Let’s be honest, it is that way I actually SHOW and SHARE love…but I don’t always have a ton of time. Here you throw everything on a cookie sheet and roast it in the oven for a few minutes…and like magic you have a home cooked meal with love!

2 pounds shrimp – raw, veined and pealed (Tail on)

1 lb Brocollini (Baby Broccoli)

1 large lemon

10 garlic cloves pealed and slightly smashed

2 Tablespoons Cucina Aurora Roasted Garlic Olive Oil

2 Tablespoons Cucina Aurora Zesty Lemon Olive Oil

**1 lb cooked pasta plus grated cheese for topping** Optional

Heat oven to 400 Degrees

On a large cookie sheet spread shrimp on half the pan, and brocollini on the other half.

Pour on Both olive oils and coat evenly.

Scatter sliced lemon and garlic cloves on top.

Place in hot oven and cook 10 minutes or until shrimp is pink and tender.

Remove from oven and enjoy!

If serving this dish over pasta (or Gluten Free Pasta), cook pasta to package instructions and toss with a bit more olive oil before serving. Drizzle pan drippings from shrimp on top and generously top with grated Parmesan cheese.
