Whipped Goat cheese with Honey and Figs

As the Spring blooms all around us this recipe is filled with the energies of renewal. It’s also a little sexy in my opinion. Anything with Figs and Honey is going to have lots of sweet sensual Goddess energy. You might be surprised at how easy this recipe is and how impressed your guests will be if you choose to serve it to others and not keep it all to yourself!

For the Crostini: 1 large French baguette 2 Tablespoons Zesty Lemon Olive Oil For the Whipped Goat Cheese: 6-8 oz goat cheese softened 1 cup chopped dried figs 1 Tablespoon water 3-4 Tablespoons Honey Crushed pistachio nuts sliced green onions for garnish 2 strips prosciutto (cooked crispy and crumbled) *optional
Make the crostini by slicing the baguette on the diagonal into 1/2 inch slices. Brush each side with Lemon oil. Cook in a medium skillet about 2 minutes on each side until golden and toasted. Set aside. Heat a small skillet on medium heat. Add the chopped dried figs, water and one Tablespoon of honey. Simmer until the figs are softened and the water has been absorbed. Set aside. Using an electric mixer on low speed, whisk/whip the goat cheese until light and fluffy, about 2-3 minutes. Spread the whipped goat cheese onto a shallow plate, top with cooked figs, 2 Tablespoons of honey, crushed nuts, green onions and prosciutto if using. Serve with Lemon Crostini.

I was fortunate to stop at the Kitchen Witchery booth at Mohegan Sun New England Christmas Festival. I purchased the Magical Marinara and that is what it is “magical” I cooked my meatballs in the sauce. The flavor was delicious with the garlic infused olive oil and a slight kick of red pepper we thoroughly enjoyed it! I will definitely be purchasing it again and will be trying the infused olive oils!

Delicious!!! Cucina Aurora oils are the best tasting oils out there!  Every time, I use them with guests, they always ask about flavors.
