Unbeatable Egg Salad

Eggs are a great springtime food. We see them all around us in early spring, around the equinox and the Easter holidays. Eggs are a traditional symbol of fertility, not just for baby making, but to bring fertility to all our endeavors! This recipe combines the eggs with bacon, a symbol of prosperity (you know, to “Bring Home the Bacon”) and avocados, which allow us to see the inner beauty in ourselves as well as others. Bringing these foods together not only creates a tasty sandwich, but energetically tunes our spirit in to new growth in multiple ways for the Spring!

  • 6 hard-boiled eggs
  • 1/2 cup low fat mayonnaise
  • 1 tsp brown deli mustard
  • Pinch salt
  • Pinch black pepper
  • Pinch cayenne pepper
  • 1/4 tsp dried parsley
  • 1/8 tsp dried dill
  • 1 teaspoon Cucina Aurora Hot Pepper Oil *optional*
  • 4 strips bacon
  • 1 large ripe avocado
  • 1/2 cup crumbled blue cheese
  • 4 slices soft pumpernickel bread
  1. Line a microwave safe dish with 3 paper towels. Lay the uncooked bacon in one layer on the paper towels and cover with an additional paper towel. Microwave on high for 4 1/2 – 5 minutes. Remove from microwave and let cool.
  2. Chop eggs into small chunks and place in a medium bowl. Add mayonnaise, mustard, salt, pepper, cayenne, parsley, and dill. Mix until combined. Add hot pepper oil.
  3. Crumble crisp bacon into very small bits. Fold into egg mixture.
  4. Cut avocado in half and remove pit. Remove flesh from the skin of avocado and discard skin. Dice avocado into 1/2 inch chunks. Fold into egg mixture.
  5. Add blue cheese crumbles and gently combine.
  6. Refrigerate for a minimum of one hour.
  7. Make sandwiches on pumpernickel bread (or Gluten Free bread) and enjoy! This recipe can be easily doubled for larger batches!
