4 slices of Italian bread (for my Gluten Free friends I recommend Sachar's Deli Slices) 2 large onions 1 TBSP butter 2 oz sharp cheddar 2 oz gouda or Swiss cheese 2 Tablespoons Cucina Aurora Limited Edition Truffle & Porcini olive oil
In a medium skillet melt butter. Add sliced onions and cook, stirring constantly until the begin to caramelize. Onions should be soft and brown but not bunt. Set aside. Heat a clean skillet on medium low heat. Gently pour olive oil into the pan and place two slices of bread in the olive oil being sure to use the bread to soak up the oil. One one slice of bread layer swiss or gruyere cheese slices. On the other evenly put a handful of shredded cheddar. Once the cheese begins to melt slightly top the shredded cheese slice with caramelized onions and flip the slice of bread on top of the onions. Flip the sandwich once or twice to ensure that the cheese is melted though and both sides are becoming golden brown. Serve immediately.
