The Sunshine Sandwich

I cook very seasonally. Sometimes this drives my husband crazy because I absolutely refuse to make this sandwich in the winter time. With crisp lettuce, fresh herb mayo and grilled chicken, this sandwich just tastes like the perfect combination of the summer harvest! Make it with the last crop of your back yard tomatoes and you are in for a real treat!

2-4 Tablespoons Cucina Aurora Roasted Garlic Olive Oil

8 slices of bread (I recommend Tuscan Pane or Sourdough) *GF bread can be used as well*

8 slices Swiss Cheese

1 sliced ripe tomato

2 avocados, sliced

1 lb of Bacon, cooked crisp and set aside

4 large grilled boneless chicken cutlets

Herb Mayo (1/4 cup mayo, chopped fresh parsley, sage, rosemary, mixed well)

In a large frying pan heat Roasted Garlic olive oil and lay the bread on top. Top each slice with a slice of Swiss Cheese. When the cheese begins to melt, spread herb mayo on one slice of bread. On the other, stack chicken, avocado, tomato, bacon and lettuce. Stack the other slice of bread mayo side down on top and remove to serving dish. Cut in half and enjoy warm!
