Spicy Fried Eggs with Avocado Smash

My love for breakfast is increasing over time. Growing up, big breakfasts were saved for holidays, and so most of the time it was cold cereal or something quick. I’ve never been a huge fan of things like pancakes or waffles…though every once in a blue moon I get a craving. But as I get older I find there is nothing better then a lazy Sunday, a steaming cup of coffee, and a big breakfast. What is so great about this recipe is that it takes no time at all, but still feels like those big special breakfasts.

  • 4 Large slices of bread, toasted
  • 1 large ripe avocado, chopped and coarsely smashed
  • 2 Tablespoons Cucina Aurora Hot Pepper Olive Oil
  • 4-6 Free Range Eggs
  • Crumbled Feta Cheese *Optional

 

 

  1. In a large skillet, heat Hot Pepper Olive Oil.
  2. Fry eggs in Hot pepper oil about 2 minutes or until yolk is desired consistency.
  3. Top each slice of toast with a drizzle of Hot pepper oil and avocado.
  4. Remove hot egg from pan and place directly on top of avocado toast.
  5. Sprinkle with feta and ENJOY!
