I love to grill. More over, I love to entertain, and in the summer there is nothing better then grilling out with friends and family. Kebabs are so pretty, don’t you think? Bright, colorful and fun to eat! This is a simple recipes for a traditional, no frills Kebab that everyone will love. You can even make these way ahead of time and throw them over a camp fire!
1 and a half pounds chicken or beef tips, cubed
1 large red onion, cut into cubed wedges
1 of each red, yellow and/or green pepper, cut into squares
3 Tablespoons Cucina Aurora Roasted Garlic Infused Olive Oil
Juice from 1 Lemon
3 cloves garlic, minced
1 teaspoon soy sauce or Gluten Free soy sauce
1 teaspoon Honey or Agave Nectar
1 teaspoon apple cider vinegar
Chopped fresh parsley, to taste
Salt and pepper to taste
In a medium bowl mix olive oil, lemon juice, soy sauce, vinegar, minced garlic, honey, parsley, salt and pepper. Whisk until all ingredients are combined. Separate one third of the mixture and toss chopped vegetables in it. Cover and let sit in refrigerator an hour or over night. Place cut up meat in an air tight container and coat with the remaining mixture. Marinate at least one hour or over night. When ready to cook, heat grill to medium heat. Skewer meats and veggies in whatever order you think looks pretty and place skewers directly on hot grill. Drizzle with any remaining marinade. Grill until meat is cooked through and veggies are slightly charred. ENJOY!
