Scallop Scampi with Garlic Risotto

This recipe can be found on the back of our Garlic & Italian Herb Risotto. However, the original recipe calls for shrimp, but scallops work just as well and definitely gives this meal an elegant flair. It’s easy to share love through food when recipes are this simple…plus it’s sooooo yummy! You can easily double this recipe to feed 4 people instead of 2.

  • 1 package of Cucina Aurora Garlic & Italian Herb Risotto
  • 1/2lb fresh sea scallops
  • 2 tablespoons Cucina Aurora Roasted Garlic Olive Oil
  • 1/4 cup white wine
  • 3 cloves garlic, minced
  • 1 teaspoon fresh lemon juice
  1. Cook Risotto to package instructions.
  2. While risotto is cooking, heat Garlic Olive Oil in a medium skillet.
  3. Add minced garlic and scallops.
  4. Cook scallops about 2 minutes, until slightly brown on one side.
  5. Flip scallops over and add lemon juice and wine.
  6. Continue to cook about 2 more minutes or until scallops are cooked through and slightly browned on the second side.
  7. Serve over cooked risotto. Drizzle pan drippings over scallops and serve along side steamed asparagus. Serve immediately. Enjoy!
