Roasted Corn with Herb Butter

Corn is abundant in August here in the North East. August 1st also marks the first harvest celebration on the Witch’s Wheel of the Year (also known as Lammas). Corn is not just a wonderful seasonal food, its energy celebrates the God in all his fiery glory. The shape of corn is masculine and its color represents the golden, life giving Sun. Corn is a symbol of the cycles of life and eternity. Try these easy ways to enjoy corn in a new way for this time of year!

  • 1/2 stick butter
  • 1 teaspoon garlic and herb dip mix
  • 1 cup breadcrumbs or gluten free breadcrumbs
  • 1/2 cup grated Romano cheese
  • 4-6 ears of corn, husks on
  1. Soften butter in the microwave for 10 seconds.
  2. Remove from microwave and stir dip mix
  3. Place corn, in husk on a hot outdoor grill. Grill about 20-30 minutes until outside husks are brown.
  4. Meanwhile, combine breadcrumbs and grated cheese
  5. Peal back husks and smear Herb butter on hot corn.
  6. roll each ear of corn in the breadcrumb mixture and enjoy!
