All the flavor and freshness of a restaurant meal in no time flat at half the price! Sounds delicious. You can whip up this quick shrimp scampi in a jiffy for a weeknight meal or the unexpected dinner guest…just add shrimp and you are 20 minutes to Meal Time Magic!
- 3 TBSP Cucina Aurora Roasted Garlic Olive Oil
- 1/2 cup fresh parsley chopped
- Juice from one fresh lemon
- 1-2 lbs frozen cooked shrimp (defrosted)
- 3 cloves garlic minced
- 1/2 cup grated Parmesian cheese plus extra for garnish
- salt, pepper and crushed red pepper to taste if desired
- 1 pound linguine, spaghetti or GLUTEN FREE Pasta
- In a large sauce pot cook pasta to package instructions.
- While pasta is cooking heat Garlic Olive oil in a large skillet and add minced garlic.
- Cook garlic in the oil, sauteing just 3 minutes until garlic is tender.
- Lower heat and add parsley, shrimp and lemon juice.
- Toss to coat until shrimp in warmed through.
- Add a large TBSP of starchy water from the pasta pot to the shrimp mixture.
- Drain pasta and toss with shrimp mixture.
- Add cheese and continue to toss to coat.
- Serve immediately with extra cheese, black pepper and crushed red pepper on top if desired.
