Quick Shrimp Scampi

All the flavor and freshness of a restaurant meal in no time flat at half the price! Sounds delicious. You can whip up this quick shrimp scampi in a jiffy for a weeknight meal or the unexpected dinner guest…just add shrimp and you are 20 minutes to Meal Time Magic!

  • 3 TBSP Cucina Aurora Roasted Garlic Olive Oil
  • 1/2 cup fresh parsley chopped
  • Juice from one fresh lemon
  • 1-2 lbs frozen cooked shrimp (defrosted)
  • 3 cloves garlic minced
  • 1/2 cup grated Parmesian cheese plus extra for garnish
  • salt, pepper and crushed red pepper to taste if desired
  • 1 pound linguine, spaghetti or GLUTEN FREE Pasta
  1. In a large sauce pot cook pasta to package instructions.
  2. While pasta is cooking heat Garlic Olive oil in a large skillet and add minced garlic.
  3. Cook garlic in the oil, sauteing just 3 minutes until garlic is tender.
  4. Lower heat and add parsley, shrimp and lemon juice.
  5. Toss to coat until shrimp in warmed through.
  6. Add a large TBSP of starchy water from the pasta pot to the shrimp mixture.
  7. Drain pasta and toss with shrimp mixture.
  8. Add cheese and continue to toss to coat.
  9. Serve immediately with extra cheese, black pepper and crushed red pepper on top if desired.
