I can remember back yard picnics as a kid. My mom would bake a batch of chocolate chip cookies and stuff them full of vanilla ice cream, and wrap them in foil then freeze them. Then, nights of chasing fireflies would be made even more special as we ran around the yard with a cookie sandwich in one hand and a jar for fireflies in the other, melting ice cream dripping down our chins.
This is my new take on my mom’s old classic. So sweet and summery…these sherbet sandwiches will be something to remember for years to come.
One box of Cucina Aurora Lemon Sugar Cookies to package instructions.
One pint raspberry sherbert or strawberry ice cream
Fresh raspberries or chopped strawberries if desired
Make one box of Cucina Aurora Lemon Sugar Cookies to package instructions.
When Cookies have cooled completely, scoop raspberry sherbet on to one cookie and create a sandwich using a second cookie.
Repeat until all cookies have been made into sandwiches.
*Optional – Roll sandwiches in Fresh raspberries, mini chocolate chips or rainbow sprinkles to the outer edges of the cookie sandwich.
Wrap in foil or wax paper and freeze for at least one hour or overnight before serving.
