There are a few things that I seem to always have in my kitchen.. bread (or in my case GF bread), mozzarella cheese, and Cucina Aurora olive oil. Although sometimes I run out of my own oil, I do try to keep a bottle or two in the pantry in case of emergency. Sometimes, an emergency means I am simply in need of a warm meal in under 5 minutes! So here is a solution to the common “what to eat” question. A hearty, warm, toasty, melty sandwich with Italian flavor and a touch of magic!
- 4 slices of whole wheat bread or Gluten Free bread
- 3 TBSP Cucina Aurora Sundried Tomato Basil infused Olive Oil
- 8 oz shredded Mozzarella cheese (or 4 slices provolone cheese)
- 2 slices sandwich pepperoni (No Nitrate, No MSG, Uncured, Organic such as Applegate Farms)
- Fresh baby spinach
- Heat medium skillet on medium heat.
- In a shallow salad plate, pour olive oil.
- Coat each slice of bread on one side by dipping in olive oil.
- Place bread oil side down on warm skillet.
- Layer each slice of bread with equal amounts cheese, pepperoni and spinach.
- When cheese beings to just melt, place one slice of bread on top of the other to form a sandwich.
- Brown evenly on each side of sandwich about another 30 seconds. Serve warm and ENJOY!
