Herby Potatoes with Garlic Aioli

In my ever ongoing quest to find new ways to make potatoes I decided to whip up a batch of these herby Italian style potatoes. Topped with shaved asiago cheese and perfect for dipping in some “Punch you in the face Garlic” Aioli…what a great comfort food for movie or game night!

2 pounds fingerling potatoes (or 3 russet potatoes) cut into wedges
2 Tablespoons Sundried Tomato Basil Olive Oil
1 teaspoon dried oregano
Salt and Pepper to taste
1/4 cup shaved Asiago cheese
1/2 cup Mayonnaise
1 Tablespoon Garlic & Herb Dip Mix

Heat oven to 425 degrees.
Coat potatoes with Olive Oil and dried oregano. Transfer potatoes to a single layer on a baking sheet. Sprinkling with Salt and Pepper if desired. Bake for 20 minutes then flip over the potatoes and bake an additional 15-20 min until crispy around the edges and soft in the middle. While the potatoes are still hot, sprinkle Asiago cheese on them so it melts slightly before serving. Make the Aioli by combining the Garlic and Herb mix with May. Enjoy!
