Garlic Roasted Greens

I made these veggies for a party to celebrate Ostara at my new apartment. Even my husband (who hates anything green) can’t stop talking about these sprouts! This is an interesting dish as it combines the female energy of the Brussels sprouts and the extremely potent male energy of the asparagus. Both in season now for Spring! Be sure to focus on your relationship and the physical aspects of it as you make and share this dish.   • 2 lbs. fresh Brussels sprouts
  • 1 lb. fresh green asparagus
  • 3 large cloves garlic, minced
  • 4 Tbsp. Cucina Aurora Roasted Garlic Oil
  • 1/4 cup fresh parsley, chopped
  • course ground sea salt & pepper to taste
  1. Preheat oven to 375.
  2. Cut off bottoms of Brussels sprouts and remove the outside leaves. Rinse and cut in half length wise. Set aside in large bowl.
  3. Snap off twiggy bottom of asparagus and discard bottom. Set asparagus in bowl with sprouts and toss to coat with 1/2 the olive oil and parsley.
  4. Place greens on a baking sheet. Sprinkle chopped garlic and salt and pepper over the top, and bake in oven about 35-45 min, until edges are browned and crisp.
  5. Turn over once in the middle of cooking.
