Fresh Tomato Tart

Tomatoes are a love food. Not only do they help us express love and draw love of all kinds into our lives, but they also can teach us how to accept love. This tart is a very different way to enjoy my favorite summer food. The flaky crust makes it a perfect dish for a summer brunch or ritual potluck! Try drawing hearts into the dough before layering the tomatoes on top to enhance the love energy. Remember, you can use Gluten Free Crust if needed.

  • 1 package refrigerated pie crust
  • 3 tablespoons balsamic vinegar
  • 4 medium sized tomatoes (Heirloom, beef steak, or what ever is at your farmer's market)
  • 1 tablespoon Fresh thyme (chopped)
  • 2 tablespoons Fresh Basil (chopped)
  • 1/2 teaspoon salt
  • 1/2 teaspoon Pepper
  • 1 tablespoon Granulated Garlic
  • 1 tablespoon Cucina Aurora Sun dried Tomato and Basil Infused Olive Oil (or regular olive oil)
 
  1. Coat a tart pan or pizza pan with non stick cooking spray.
  2. Roll out dough on lightly floured surface to 1/4 inch thickness. Press into prepared pan. Bake for 12-15 min or until lightly colored.
  3. Remove and cool. Reduce oven temp to 400.
  4. Slice tomatoes and squeeze out some of the moisture.
  5. In a medium bowl combine the vinegar, olive oil, fresh herbs, salt, pepper, and granulated garlic.
  6. Layer the tomatoes onto the prepared crust. Drizzle with olive oil mixture.
  7. Bake at 400 for 30 minutes or until tomatoes are hot and crust is browned.
