Egg and Tomato Breakfast Melt

I’m always coming up with different ways to use tomato sauce. When i was little my grandma would put leftover sauce in everything from potatoes to , you guessed it, eggs.

This is a simple recipe with a scoop of marinara sauce scrambled right into the eggs for a depth of flavor you will love. Try in once and you’ll never eat eggs the same way again.

2 eggs 1 - 2 Tablespoons Marinara sauce 1 large (8-10 inch) tortilla (or gluten free tortilla) baby spinach chopped cherry tomatoes about 1/4 cup shredded mozzarella cheese  
Heat a large skillet on medium heat Scramble eggs and tomato sauce together. Spray the hot skillet with cooking spray and pour in the scrambled eggs. Let cook about 1 minute and gently place tortilla on top of cooking eggs. When eggs have just set, flip the egg and tortilla over in one quick motion, Top with cheese, spinach and tomatoes. Fold over the tortilla and egg to form a half circle. Brown tortilla on both sides. Cook until cheese in the middle is melted. Serve immediately and dip in extra marinara sauce.

Delicious!!! Cucina Aurora oils are the best tasting oils out there!  Every time, I use them with guests, they always ask about flavors. I was fortunate to stop at the Kitchen Witchery booth at Mohegan Sun New England Christmas Festival. I purchased the Magical Marinara and that is what it is “magical” I cooked my meatballs in the sauce. The flavor was delicious with the garlic infused olive oil and a slight kick of red pepper we thoroughly enjoyed it! I will definitely be purchasing it again and will be trying the infused olive oils!
