Normally I am all about the healthiest options and I don’t tend to make a ton of fattening food, but this quiche is just full of butter and cheese and all the most amazing flavor! Definitely a special occasion food, I tend to only make it a few times a year, like Mother’s Day brunch or something like that. The secret to making it light and fluffy is the baking soda. Start with a ready-made all natural pie crust (like Trader Joe’s brand) and you are halfway done from the start.
1 nine inch pie crust (Ready made, or Gluten free works great)
9 eggs
1/4 cup heavy cream
1/4 cup ricotta cheese
1/2 tsp Baking Soda
2 TBSP Cucina Aurora Roasted Garlic Oil
2 cups fresh broccoli (florets only)
1 half large white onion chopped
Salt and Pepper to taste
1 cup shredded cheddar cheese
In a medium skillet heat Garlic Oil.
Saute onions until they begin to sweat.
Add broccoli and saute until broccoli has just softened, set aside to cool
In a large mixing bowl whisk eggs, cream, ricotta cheese, baking soda, salt and pepper.
Whisk in Broccoli mixture and cheddar cheese.
Pour into prepared pie crust.
Top with more Cheddar
Bake at 350 for 60 minutes.
Enjoy warm!
