Bolognese

There is nothing quite like a big bowl of pasta with bolognese (meat) sauce…easy, delicious and the quintessential comfort food for this kitchen witch.

When I was little I can remember making a very “kid friendly” version of this dish. My mom would leave for night school and I was in charge of making dinner to be ready when my Dad got home. So I would brown the meat in a skillet, add a jar of “store bought” tomato sauce and some spices, let it simmer and make some pasta. When Dad got home, we would feast! I would even make some garlic toast and a salad (out of a bag) to go with it. I felt so fancy!

Here is a great, and still super easy recipe for a comfort food that is so much a staple in my home that I would be lost without it!

NOTE- Some bolognese sauces are made with carrots and cream for a sweet finish…. This is my traditional go-to meat sauce. I will post another creamy bolognese sauce in the future for those who want to try it.

In a large skillet, heat oil and minced garlic. Add meat and saute until cooked though. Drain any excess fat from the pan. Add crushed tomatoes, tomato sauce, herbs and spices, and wine if using. Lower heat and let simmer for 40-60 minutes, stirring occasionally. Enjoy on top of your choice of pasta. This sauce works great for lasagna, baked ziti or as a pizza sauce. Try it on Gluten Free pasta! You won't be sorry!
