Zucchini Spice Loaf

This sweet and moist bread is the perfect Lammas or Mabon food! Mabon is the second harvest holiday and so we come together around breads to symbolize the wheat harvest, and zucchini is at its height in these late summer/early fall weeks.

You can pick up giant ones at the farmer’s market for just a dollar or two. Remember that the zucchini holds male energy due to its shape and tap into that by meditating on a hard job you might have coming to a close. Let the assertiveness of the zucchini help you in the tasks ahead.

  • 3 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 TBSP cinnamon
  • 1 TBSP nutmeg
  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 tsp vanilla extract
  • 2 cups grated zucchini
  • 1 cup golden raisins
  • 1 cup chopped pecans (optional)
  1. Heat oven to 350. Spray 2 8x4 loaf pans with cooking spray.
  2. Combine flour, salt, baking soda, baking powder, cinnamon, and nutmeg in a bowl and set aside.
  3. In a large bowl combine eggs, oil, sugar, and vanilla extract. Mix on low speed with an electric mixer until well combined.
  4. Add flour mixture and stir with a large spoon.
  5. Add zucchini, raisins, and pecans. Mix until well combined.
  6. Pour into loaf pans and bake for 50-60 minutes or until inserted toothpick comes out clean. Cool completely.
