HEAT!!! That is what the Spring brings with it, a renewal of the Warming of the Earth. The heat that is deep within the Earth is finally waking from it’s long winter slumber. This hot tomato and chicken dish can be made extra spicy or mild, depending on your taste. No matter what, it packs the power of sun energy and the reminds us of the heat dwelling deep inside all of us!
- 1 lb. boneless chicken breast, cut into cubes
- 1 small onion, chopped
- 3 cloves garlic minced
- 1/2 red pepper, chopped fine
- 4 Tbsp. olive oil
- 1 15oz can crushed tomatoes
- 1 8oz can tomato sauce
- 1/2 cup water
- 1 Tbsp. crushed red pepper
- 1 Tbsp. dried basil
- 1 tsp dried oregano
- salt and pepper to taste
- In a large frying pan, heat oil. Add onion, garlic, and pepper. Let soften, stirring frequently about 3 minutes.
- Add crushed tomatoes, tomato sauce, red pepper, basil, oregano and salt and pepper.
- Stir to combine, and lower heat. Let simmer about 30 minutes or until liquid has reduced.
- Serve over Risotto or pasta.
