When ever someone asks “what else can I do with this oil?” while talking about our best selling Garlic Infused Olive Oil, this is the recipe I always give them. Like we say…the Garlic oil is the “Gateway Oil”: it gets you addicted! Well then, this is the gateway recipe….easy enough to whip up on a weeknight after a long day, a total crowd favorite, and nice enough to serve to guests!
3 Tablespoons Cucina Aurora Roasted Garlic Olive Oil (plus more for tossing pasta)
1 lb pasta (your choice – GF Works well)
1 cup chopped cherry tomatoes
2 lbs chopped white meat chicken
1 bag baby spinach
Grated Parmesan cheese (as much or as little as you want)
In a large pot cook pasta to package instructions
While pasta is cooking, heat 3 TBSP oil in a large skillet
Add the chicken and saute until cooked through. Add the spinach and toss until spinach just starts to wilt.
Drain pasta and add to skillet tossing with chicken and spinach. Add more Garlic Oil if necessary.
Turn off the heat and add tomatoes.
Remove to serving dish and toss with grated cheese.
Top with more grated cheese if desired and serve immediately. ENJOY!
