Let’s face it, pizza is an obsession.
This recipe is an ode to a recipe found in my book, A Kitchen Witch’s Guide to Love & Romance but with a twist for my new friend, Nicholas Pearson, the authority on modern crystal healing and mineral working. After a conversation on my Podcast, I promised I’d come up with a recipe just for him using the divine fig!
1 store bought pizza crust
2 Tablespoon Rosemary Oregano Infused olive oil
1 cup sliced mushrooms
1 jar fig jam
4 oz goat cheese crumbled
Heat oven to package instructions on your pizza crust. Brush pizza crust/dough with Rosemary olive oil. In a small sauce pan, heat the fig jam until smooth, add water (or white wine) by the teaspoonful to thin it out if necessary. The consistency should be like Honey. Mean while, sauté the mushrooms on medium heat using 1 Tablespoon Rosemary olive oil, until mushrooms are slightly cooked but still firm. Top the pizza crust with mushrooms, then drizzle half of the melted fig Jam, then half of the goat cheese. Bake to crust instructions. Remove from oven and while still hot, drizzle more fig jam and goat cheese to desired taste. Enjoy warm.
