Grateful Gazpacho

Tomatoes are in season now, until September. Although you can find them in your local grocery store all year long, there is really nothing like fresh tomatoes from your own garden or Farmers’ Market. Tomatoes help us to accept and give love freely. The flavor that really stands out here is the refreshing crunch of the cucumber along with the sweetness of the tomatoes. Energetically, cucumbers are full of masculine energy and help us to refresh our spirits. Combining them with tomatoes for love, and onions to banish negativity, makes this is a great recipe to help you get out of an emotional rut and wake up your spirit!

  • 6 ripe tomatoes chopped fine
  • 1 large cucumber minced
  • 1 large red onion minced
  • 1/2 cup fresh cilantro chopped
  • 2 8oz cans tomato juice
  • 1/2 cup green onions sliced
  • 1 jalapeno pepper minced very fine (optional)
  • 1 tsp hot sauce (your favorite)
  • 1 TBSP olive oil
  • juice from one lime
  • 1 TBSP salt
  • 1 TBSP ground black pepper
  • pinch paprika
  • 1 large avocado for garnish
  • sour cream
  1. Take all ingredients and combine in a large bowl. Stir everything together to evenly mix.
  2. If you find your gazpacho is too thick, then add more tomato juice. Cover and chill at least one hour or over night.
  3. Serve cold with sliced avocado and sour cream on top, along side blue corn chips or warm corn bread.
