Apple Walnut Salad

Fresh, tart, sweet and crisp: this simple yet hearty salad makes a great side dish for your Autumn meals, but is perfect for a light lunch all on its own.

  • 1 head Romaine lettuce, chopped
  • 1 head green leaf lettuce, chopped
  • 1 cup chopped kale
  • 2 radishes, sliced into rounds
  • 2 firm tart apples, cubed (skin on)
  • 1 package glazed walnuts
  • Crumbled Goat cheese (optional)
  • 1 package Italian Salad dressing mix, such as Good Seasons
  1. Make dressing to package instructions using Apple Cider vinegar. Set aside.
  2. In a large wooden salad bowl, toss lettuce, kale and radishes.
  3. Add half of the apples and the walnuts. Toss with Ā½ the dressing.
  4. Top with remaining apples, walnuts, and a bit more dressing if desired.
